Simplicity

 

Simplicity is  my favorite word. There are many wonderful words but, if you were to ask me my favorite I would answer simplicity.

When my stress level is high, and life feels uncertain, I start physical projects. In January, I began painting our house shades of white . I have continued on during the pandemic. I finished the kitchen, mudroom, den, hallway, bathroom and even the basement stairwell.  My husband Dan polished all of the brass door knobs. It feels so much better. I have decluttered along the way. I am working on keeping what is functional and what I love.

Simplicity

I am now working out in the garden. I planted lettuce, arugula, spinach, tomatoes, cucumbers and wildflowers. Today, I am heading out to plant potatoes. I don’t get a lot of sun in the back yard, so I ordered fabric grow bags. I have a walkway alongside the garage that gets all day sun. It is my new garden. So exciting!

I watched a Master Class with gangsta gardener Ron Finley. He plants sweet potatoes in coffee bean bags. I called Booskerdoo in Asbury Park and picked up a few jute coffee bean bags for myself and two of my gardening friends. I am waiting for my sweet potatoes to grow slips so I can plant them.  I will keep you posted! Today, I planted potatoes in the coffee bean bags. I couldn’t wait for the sweet potato slips. I will find another place for them.

I also bought Alice Waters My Pantry after watching her Master Class. I loved her class. She inspires you to cook fresh whole organic in season food from your local farmer, or just grow your own. Plant potatoes into a coffee bean bag and wait for the magic to happen.

Dinner in 20!

Do you have a weekly meal plan?

I cook about the same every week. I try my best to eat in season. I change up the vegetables and herbs depending on what was at the Farmer’s Market, or in the CSA box that week.

Having a plan makes shopping easy. I shop once a week at Whole Foods and Trader Joe’s. I just go through the aisles and buy the same thing I also love Thrive Market. We eat what I buy so there is very little waste.

Here is a typical week of dinners.

  • Saturday: White rice, vegetables, cod  (Click here to read why I eat white rice instead of brown rice.)
  • Sunday: Banza chickpea pasta, chicken sausage, vegetables
  • Monday: Shrimp, sweet potatoes, vegetables
  • Tuesday: Chicken Fajitas(I marinate enough chicken thighs so I can have it on Thursday as well.) I serve with grain free Siete Chips.
  • Wednesday: Scallops, rice, vegetables
  • Thursday: Chicken Fajitas
  • Friday: Pizza Night! Amy’s cheese-less pizza, chicken sausage, vegetables

I cook in portion sizes. I cook for four. Full disclosure, sometimes the three of us eat the whole thing. Or I save one serving for Tom’s lunch the next day. The beauty of it all is cooking time is about 20 minutes.

Lately, I  have been buying a whole organic chicken, pasture raised when I can find it. I make pulled chicken for lunches, and save the bones to make bone broth. I love the efficiency and no waste in the process! During the week, I cook rice in the homemade bone broth. The broth is so good for you and it adds great flavor to the white rice.

I love having a plan and knowing what’s for dinner. My special needs son Tom will ask me what’s for dinner. If I don’t have an answer he will keep asking. He has made me organized! I now have less stress around dinner. I am also working on eating earlier. The plan is to eat at 6 pm. I need to start cooking at  5:40. I can usually get in on the table in 20 minutes or at least in 30!

I love having my IPAD on my kitchen windows so I can watch Garden Answers or Grace and Frankie for the third time! It makes kitchen time fun!

June

I almost gave up wine again. I really enjoy my evening glass of wine. It was slowly starting to be more than one glass of wine. I have been working hard in the garden. I like to keep my wine in refrigerator this time of year. I would come in around 5pm, take a shower and then come down to make dinner. I would pour a glass of wine and start cooking. I would pour a little more in my glass to have with my dinner. You know how it goes. I do fine if I stick to one glass of wine. I have a friend who announced she is not drinking for the month of June. I thought I “should” give it up for the month too. You know what, I don’t want to. I have done it before and it is aggravating.

Instead, I am recommitted to just one glass of wine and I am drinking 2 jars of water before I have the glass of wine. I am hydrated and feel so much better and I don’t want the extra glass of wine.

Here is the June Challenge and I encourage you to do it with me. Drink at least half your body weight in water daily. I weigh 137lbs. I  need to drink 68 oz of water. I am drinking 2 jars of water before meals and before my morning coffee. Each jar holds 16oz of water. I am drinking 6 jars a day which is 96 oz of water which is even better. Instead of giving up something that I really enjoy I am adding something that I will benefit greatly from.

Take Action!

Can you get up off the floor easily? I was with a friend this weekend that set up a birthday party for a 63 year old woman. They planned fun games from their past like Twister. The problem was most of the women could not get up off the floor. Please don’t assume this is part of aging. You need to work on staying strong and flexible!

Get down on the floor and see how easy or difficult it is to get up. Let me know!

I have been working on my flexibility. I want to improve my squat and I am running again! Going slow in my new NB Minimus but I am going.  I am running on soft surfaces, the grass or on the dirt path in the woods. Something I had given up on because of my back. I have been diligently working on strengthening my back with Foundation Training. Since I have discovered Katy Bowman I am also working on my feet. I have been able to get rid of my orthotics and I am wearing a cute minimalism sneaker!! So Far, So Good.

Feeling Good in Your Body.

Feeling strong and healthy is a major goal for me.

I have had back issues all of my life. I had orthopedic shoes as a kid. I have worn orthotics since college. I wore puffy shoes!  I was a competitive runner so I placed a lot of stress and impact on my body over the years.

I have been researching and studying natural functional movement. I have incorporated Foundation Training by Dr. Eric Goodman into my daily routine . I have a new best friend Katy Bowman of Nutritious Movement. She talks about the importance of incorporating movement into your day. I have taken  their exercises to create strength and  mobility into my body. I  have been focused on my feet, hips and back. I am so excited at 62 because I no longer need my orthotics. The nagging back and pain is gone. If it starts to creep back in I know what to do about it.

Bonus Round… I am able to walk barefoot in my house pain free.

A Fit and Fabulous Workout!

Here is an example of one one of my Fit and Fabulous workouts. Do this two to three times a week. These workouts are very effective, fat burning, boost your metabolism , strengthens your core. Your low back will thank you.  You will feel long and lean when you are finished.

Warm -up…move around before starting the  workout, walk your dog around the block first , do a few hips circles, pick your knees up. You get the picture.

1. 4 minutes of mountain climbers

one minute rest

2. Strength training repeat three times.

A Jump Start to Fit and Fabulous!!!

My intention for 2015~

My intention  for 2105 is to empower as many people as possible to become Fat Burners! It takes 5 days to change from being a chubby sugar burner to a vibrant healthy fat burner. I use the 5 day Reset program to do this.  January has been a great month. I have many people on their fat burning journey.

I am very excited because my 2 sisters and my neice are starting Reset tomorrow. I created a special video for them to really jump start their program. It will work for you too!

You need to set aside 2 minutes in the morning to do this. You can do it in your pajamas if you want to. It will get your metabolism going for the next 24 hours and you will feel fabulous.

So here goes, do it with me!
