Balance Your Hormones Day 10!

I am thinking of changing the name of the program to Happy Healthy Hormones! I am feeling so much better. I am sleeping well which is SO KEY to all of this. I have tons of energy which I usually do but I feel more grounded and less agitated.

I did give up on the green tea in the morning instead of coffee. It felt too depressing to me. I LOVE my coffee blended in the morning with coconut oil and ghee. I am going with it.

This week end I made grain free granola. The recipe is from Danielle Walker’s Against All Grain cookbook. I didn’t use a dehydrator. I baked it in the oven at 250 for 2 hours. The recipe called for 3/4 maple syrup. I reduced to 1/2 cup. (Not sugar free) I did portion it into small jars. A treat for the weekend.against-all-grain

I like to portion things out to prevent overeating.

I still miss my glass of wine but it is getting easier.

It is not too late to join in …  Gluten, sugar and alcohol free for 30 days! So much easier with friends! Dr. Northrup says we will feel changes quickly. Balanced hormones are key to fabulous health!

Balance Your Hormones Day 9!

Day 8 was a bit rough. Sunday is usually a day off where I enjoy a treat at coffee hour at church and have ice cream for dessert. Yesterday, Ivone saved the day! She invited me over with her friend Susie who was a pastry chef to try out some of Danielle Walker’s grain free baked goods.

Full disclosure there is some sweetener in the baked goods. We had a good time and I went home with Paleo sandwich cashew butter bread and rosemary bread sticks! It was a fun way to spend a Sunday afternoon.

Balance Your Hormones Day 7!

7 days in…

I enjoy a glass of wine when I go to cook dinner.  Now that I am off alcohol, dinner time feels stressful to me. I am looking for ways to make this process easy.

My friend Ivone gave me her crock pot. (She updated her crock pot. A nice ALL-ClAD.) I am thrilled to have her old one. Ivone is an amazing cook. It is great karma to have her crock pot!

10 o’clock this morning I made slow-cooker beef chuck chili. Danielle Walker’s recipe from Against All Grains. (Page 96) It is a nice easy recipe. Our dinner will be all set! against-all-grain

I have also been blending up “GOOD GIRL MOONSHINE”.  I found it on Pinterest last year when I was looking for a wine replacement.

Balance Your Hormones Day 6

The weekend! Time when you would like to indulge a bit. I am staying with it. No Sugar,  Gluten, Alcohol for 30 Days.  I will slow down and take care of myself.

Here is a treat idea! I love to saute organic apples or pears in ghee and add chopped pecans at the end. Sprinkle with cinnamon of course! It only takes a few minutes. #guiltfreeapplepie It makes your house smell cozy.   apples

The ghee and nuts lower the glycemic load of the fruit. The key is to keep your blood sugar balanced.

My Secret Breakfast!

It is not really a secret but I feel my typical breakfast has been very helpful. My son Thomas has it as well. My son Tom as many of you know is 27 and Developmentally Delayed. It is really important to me that it eats well.  I make him a shake and give him a bowl of my secret weapon to start his day.

My friend and mentor Penny Northrup Kirk told me about this. She is 65 and looks phenomenal. She is down to her fighting weight.! Since starting this protocol I have released 4% body fat and weaned myself off my bio-identical hormones.

Recipe

1/4 cup Organic Full Fat Cottage Cheese

2 TBS Organic Flax seed oil (buy the good stuff in refrigerator section)

1 TBS Organic Ground Flax Seed

Pet touches…I like to add sliced pears or apples with pecans. Or Turmeric with black pepper and pumpkin seeds. The possibilities are endless!

NUT FUDGE

I have been making Nut Fudge for a quick go to snack. I have been increasing the Fat and reducing the grains and sugar. It is my new healthy sustainable lifestyle!

Here is the Basic Recipe. (Add you own pet touches.)

1 Stick organic grass fed butter

1/2 cup coconut oil

8 drops stevia

1 tsp vanilla extract

1 cup chopped raw nuts

2 scoops of protein powder (I use soy or whey protein.)

Melt the butter and coconut oil in sauce pan. Add the rest of the ingredients. I spread the fudge into a 8×8 pan lined with parchment paper. Refrigerate.  Cut into small squares.

The Nut Fudge is high in calories. It won’t cause a spike in your blood sugar. Enjoy a small piece.

Make It Easy!

I love one pan cooking! Here is our lunch from Friday.  Mahi Mahi burgers, chopped fresh pineapple and asparagus. I put it all in the pan with a little olive oil. Cooked the burgers 4 minutes each side and the pineapple chunks and asparagus were warmed up when the burgers were done. So simple, easy and delicious!

6 minute Egg in Avocado!

 

Eating a higher fat diet especially breakfast has created a real shift in my body. This was my breakfast this morning.

Slice an avocado in half.  Flattened it out slightly keeping the depression for egg.

ghee or butter in frying pan, heat avocado for one minute over med heat and add egg.

add small amount of water to pan, cover and simmer for 5 minutes.

Topped with greens and basil from my garden.

salt and pepper to taste! DELICIOUS!! Thomas had one too. #makesmehappy

Grain Free Banana Pancakes

Since I have been on my 90 day wine free challenge , I have been making more of an effort to create very satisfying delicious and nutritious meals. This morning for breakfast I made Grain Free Banana Pancakes with sauteed pears on top. I have had many requests for the recipe so here it is.

  • 1 banana
  • 2 eggs
  • 1/2 tsp vanilla extract or I love maple extract
  • a serving size of protein powder. I use 2 scoops of My Smart Whey.
  •   sprinkle in cinnamon.

Mix it all together and cook on the griddle. I use coconut oil to grease the griddle.

Bonus round! Thinly slice a pear and saute in butter , add a few chopped pecans with pears at the end.

I also like to top my pancakes with a dollop of plain full fat yogurt.

A FIT AND FABULOUS WAY TO START YOUR DAY!

No wine, 22 days in.

Time to check in. No wine for 90 days has been a challenge.  I remember Wayne Dyer talking about giving up alcohol and how it was no big deal. When I talk about it, it feels silly that it has had such an impact. I have been feeling emotional flat and depressed or maybe sad is a better word. I have found ways to deal with all of it and it is getter better.

Excuse the shakiness, I need my AV guy!

I have been making a effort to cook delicious satisfying meals. Google the Barefoot Contessa, she has great recipes. I am hoping to shed a few pounds. I have been making Ina Garten’s roasted cashews and eating lots of them. Delicious and high in calories. It is all an adjustment.

This morning, I made low-glycemic grain free banana pancakes.
