Cinnamon Butter Cookies with Liz Finley!

Lizzie is a client of mine. She starting working with me in August. I am so impressed how Liz committed to the Fit and Fabulous Program and she has seen results!

Her goal was to lose weight and to feel her best. She has lost 13 pounds. She has eliminated the sugar and diet soda in her diet. Liz focuses on eating a balanced clean diet and she takes pharmaceutical grade supplements. She trains with me twice a week and walks the other days. She has increased her weights and is getting stronger while shedding the pounds!

She has been asking me for cookie recipes that she can enjoy during the Holidays. She doesn’t want the sugar. Today, after the workout we made Cinnamon Butter Cookies with only 5 ingredients!

* INGREDIENTS *

  • 2 cup almond flour
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp vanilla extract ( non alcohol )
  • ½ cup grassfed butter ( room temp )
  • 1 tsp liquid stevia

 

* INSTRUCTIONS *

  • Preheat oven to 300 degrees.
  • Mix everything in a bowl, forget the spatula and just use your hands.
  • Form into little bites ( about 24 ) and place on parchment paper on baking sheet.
  • Press lightly with fork.
  • Bake until golden brown ( about 20 minutes ).

 

* Makes approximately 24 cookies, 1 serving = 2 cookies
* Approx per serving: 180 calories, 17g fat, 4g protein, 4g carb, 2g fiber

I love that you can mix the batter with your hands. It is so simple and easy! They are cookies that are good for you!

Butter Pecan Fat Bombs!

Does eating Fat scare you?

Let me start this post by telling you that I have released 7 pounds this past year by eating more healthy fats! In the process, I have reduced my sugar and grains. The amazing part is I really don’t miss it.

I am determined to have a happy, healthy and cozy December because I don’t want to detox in the New Year!

I am excited to share some fun healthy recipes with you this month!

Here is a fabulous easy recipe for you. Happy December!

The basic recipe is from Mark Sisson’s The Keto Reset Diet.

1/3 cup coconut oil

1/3 cup coconut butter

Melt in a double boiler and then add your flavorings. Today I added 1 TBS ghee and 1/4 chopped pecans. Pour into a silicon mini muffin mold. I have the regular mold so they come out like wafers. Freeze. Pop the fat bombs into an air tight container and keep in the refridgerator or freezer.

Recipe makes 10 fat bombs. 123 calories.

Grain Free Chocolate Chunk Cookies~

Grain Free and super low sugar delcious chocolate chunk cookies!  I am committed to a healthy December and 2018! I don’t want to repeat last January of no sugar, no gluten, no alcohol because I over did the Holidays! I hope you will join me in a healthy, happy, and cozy December!

Here is a fabulous cookie recipe. You don’t need to bake the cookies that your Grandmother made. These are so easy, all you need is a spoon and a bowl to mix. Quick and easy is how we like it! Start a new tradition of your own! Thomas loves them too!

Grain Free Chocolate Chunk Cookies

Prep Time: 15 min.
Total Time: 45 min.
Makes: 16 delicious cookies

Ingredients: 

  • 2 cups cashew flour
  • 3 tbsp. grass-fed butter
  • 3 tbsp. sugar
  • 2 tsp. vanilla
  • 1 pastured egg
  • 1 tsp. baking powder
  • 1 tsp. apple cider vinegar
  • A pinch of salt
  • 1/3 cup  chocolate, chopped. (I bought a very dark chocolate bar and used half of it.)

Instructions:

  1. Preheat the oven to 350 F. Line a baking tray with parchment paper.
  2. Add the cashew flour, salt and baking powder into a bowl.
  3. Pour the apple cider vinegar directly on top of the baking powder and allow it to react (it will go fizzy).
  4. Add the remaining ingredients to the bowl and stir to combine evenly.
  5. Begin rolling the mixture into balls and place them onto a parchment lined baking tray.
  6. Press the balls as flat as you like, they won’t rise much, so if you like them softer and chewier keep them quite full. However, if you like a crunchier cookie, press them quite flat using your hands to shape them.
  7. Place the cookies in the oven and bake for 15 minutes, or until golden brown.
  8. Remove from the oven when they’re ready and place the cookies on a wire cooling rack.
  9. Store in an airtight container when completely cooled.

Honeynut Squash Soup

The Honeynut Squash is a mini version of the butternut squash. I first discovered it at Trader Joe’s and then at the local Farmer’s Market. They are easier to slice and peel compared to  butternut squash.  I have been using a lot of squash this fall. It is so nice to cook in season!

I saw a version of the Squash soup recipe on Little Bites of Joy’s Blog. I was inspired to try it with the Honeynut Squash. You can substitute butternut squash or acorn squash.

Honeynut Squash Soup

1  yellow onion, chopped

1 tablespoon coconut oil

3 Honeynut squash, cubed (or about 5-6 cups)

1 can full fat coconut milk 

Chicken or Vegetable Broth

Sea salt and pepper, to taste

 

Saute the chopped onion in coconut oil until soft. Add the cubed squash and cover with broth.  Bring to boil and lower hit to simmer for 25 minutes until the squash is soft. Add 1 can coconut milk and blend with an immersion blender. Add salt and pepper to taste.

A special treat: Topped with crumbled cooked Niman Ranch Maple Bacon.

SO GOOD!!!

Grain Free Granola

Would you like to try my Grain Free Granola recipe?  It is a treat you can have when you finish the 7 day…Feel Fabulous program. Every thing taste better with a little of this granola on top!

Grain Free Granola

3 cups chopped raw nuts

2 TBS Coconut Oil

1 TBS Cinnamon

1 ½ TBS Vanilla Extract

¾ tsp sea salt

1/4 cup maple syrup or honey

 

Put everything together on a cookie sheet with sides. Stir it and bake on 250 for an hour. Stirring a few times.

Portion control is key. Lots of calories. Delicious!!!

Making Crackers with Chef Ivone!

Some days you just need chocolate.

Happy Valentine’s Day! Day 24!

I am not a big Valentine’s person. I felt it would be nice to have a treat for dessert tonight. I made Guilt Free Chocolate pudding recipe from Eat For Your Gut by Dr. Nicole Rivera. I added chopped nuts and silvers of 85% Cacao.

I also made my Energy Bites. Quick and easy snack. Here is the basic recipe.

I had a break through!

Yesterday on Day 22 of no gluten, sugar or alcohol I had a break through. I have been fighting the program just about the whole time. I don’t especially like rules even my own rules.

I have been agitated and stuffing myself. I am stuffing myself with good things, blueberries, red peppers, carrots… Whenever I go to cook I start eating. I decided yesterday to stop it. I feel so much calmer since then. I love to chew gum as well. It is the same kind of habit. Yesterday, I slowed down, sat down and ate my meal or snack. I enjoyed my meals so much more. Mindfulness.

I also spent 15 minutes sitting on my cushion in my bedroom. I say I am going to meditate on a daily basis but I don’t. It is so very helpful.

These past 22 days have not been super easy. You know what? I do feel so much better. Why do I fight it???My sleep, my  body , my energy is fabulous! I want to tell everyone. Do you suffer from aches and pains, insomnia, lack of energy? Get off the grains, sugar and alcohol and see how you feel. I am telling you it is so worth it!

I have put together a 7 day program of No grains, sugar and alcohol with my friend Chef Ivone of Healthy Sage.

Ingredients
  • 2 cups of milk of choice
  • 1 teaspoon Turmeric
  • ½ teaspoon Cinnamon
  • A few drops of liquid stevia
  • Pinch of black pepper (increases absorption)
  •  ¼ tsp ginger powder
Instructions
  1. Put all ingredients in small sauce pan blend with a blender stick.
  2. Heat on med heat for 3-5 minutes.
  3. Drink it! SO SOOTHING!

 

Love The Ghee!

I started making ghee a few months ago when I decided to increase the fat in my diet. I LOVE IT! I blend it in my morning coffee with coconut oil. I sauteed apple and nuts in ghee to add to my breakfast. I sauteed tofu, cashews and rosemary in it for an afternoon snack. It makes everything delicious!

Adding more fat to your diet, helps your hormones stay in balance.

  • Ghee has a high smoke point. It is excellent to cook with.
  • Ghee is rich in Vitamin A, D and E.
  • Ghee can be used by people with dairy sensitivity. The lactose and casein is removed during the straining process.
  • Ghee made from happy grass fed cows contain CLA, Conjugated linoleic acid. CLA may actually reduce blood pressure, cholesterol and tumors. It has also been helpful in weight loss, reducing inflammation and body fat.
  • Ghee contains Butyrate which may improve colon health and digestion.

The best part, it is DELICIOUS and you can keep it on your counter in a pretty Ball jar!

It is easy to make ghee. Take a pound of organic unsalted butter, (grass fed butter is even better) and put it in a pot on a low temperature. I let it cook for about 15 minutes and strain it through cheese cloth to remove all of the toxins from the butter. My friend Dr. Deb Kern has a great video on making ghee. She loves to chant and send out goodness while the ghee is simmering. It is a spiritual practice for her.

I almost quit!

I almost quit a few times! 30 Days of NO gluten, sugar, alcohol!  I like my life to be easy. I like having a glass of wine every night. I have been feeling very agitated!  I am doing this because I wanted to balance my hormones, I wanted to sleep better and I wanted to get rid of my burning mouth. Guess what? I am sleeping so much better and my mouth stopped burning!

Why am I so agitated???

There is a part of me that wants to have a glass of wine. It is amazing the power it has over me. I am sure I am not the only one out there. The sugar and gluten is not such a big deal.

I have to thank my accountability partner Ivone. I sent her a text yesterday that I was done! The plan was to have a daily glass of wine and stay away from sugar and gluten. I was driving to the store to buy a nice bottle of Chardonnay  when my phone rings and Ivone talks me out of it. AAAAHHH!

SO Super Bowl Sunday and I am back on track. I laid down on the floor for 30 minutes this afternoon and that really helps.

Tonight, I am making Curry Girls Kitchen Chicken Chili and Sweet Potato Nachos! I am excited that I found the Curry Girls on Instagram. It looks like they have lots of good easy recipes! More to come!
